Smashed Meringue with Passionfruit Syrup & Seasonal Berries

Ingredients:
- ½ cup coconut oil (melted)
- ½ cup honey, agave or maple syrup
- ½ cup any nut butter
- ½ tsp cinnamon
- 2 tsp vanilla extract
- Pinch salt
- 2/3 cup brown sugar
- 1 ½ cups rolled oats
- ½ cup desiccated coconut
- ½ cups mixed nuts (mix of nuts, seeds and dried fruit)
- ¼ cup mixed seeds
- ½ dried fruit (diced)
- 15% Sunny Ridge Freeze Dried Strawberries – natural
- 1/3 cup plain flour
Method
- Preheat oven to 180 degrees
- Grease and line a 28cm x 20cm slice tin with baking paper
- Place the coconut oil, honey, agave or maple syrup and nut butter into a mixing bowl and stir until combined
- Add the cinnamon, vanilla extract, salt and brown sugar and mix together well.
- Add the rolled oats, coconut, nuts, seeds, dried fruit, plain flour and freeze dried strawberries. Mix together, until well combined.
- Pour the mixture into tray and press down firmly and evenly with the back of a spoon.
- Bake for 40 minutes or until golden. Allow to cool for 30mins before cutting into slices.
