Ingredients:
- 250ml sunny ridge passionfruit syrup
- 2 egg whites
- 130g caster sugar
- 1 large baking tray with baking paper
- Double thicken cream
- Sunny ridge seasonal berries to serve/ garnish
Method
- Preheat oven to 110-120°c. Line a baking tray with baking paper. Draw a 25cm diameter circle on the baking paper.
- Whisk the egg whites until stiff and then gradually add the sugar a spoonful at a time while continuously whisking.
- Spoon egg white and sugar mixture evenly onto the baking paper pre-drawn circle.
- Bake meringue in the centre tray of the oven for 60-75 mins or until the meringue is lightly golden. Turn off the oven and leave the meringue inside the oven to cool.
- Once the meringue has cooled down, place on a flat serving dish and using a wooden spoon gently crush meringue. Garnish with lashings of thickened cream seasonal berries.
Can also be baked into individual servings
Meringues (ungarnished) can be stored in an airtight container for up to 7 days.
Garnish within 1-2 hours of serving
