Blueberry Pancakes

Soft and sweet blueberry pancakes, fluffy and moist, rich in fresh fruit flavor, a perfect cozy morning treat.

Ingredients

  • All-purpose flour 150g
  • Eggs 2
  • Milk 200ml
  • Granulated sugar 30g
  • Baking powder 8g
  • A pinch of salt
  • Melted butter 20g
  • Fresh blueberries as needed
  • Honey /maple syrup for topping

Instructions

  1. Crack eggs into a bowl, add sugar and salt, and stir until sugar dissolves.
  2. Add milk and melted butter, then mix well.
  3. Sift in flour and baking powder, fold with a spatula until smooth and lump-free.
  4. Preheat a pan over low heat, brush with a little oil, pour in batter, and place a few blueberries on top.
  5. Flip when bubbles form and edges set, cook until both sides are golden brown.
  6. Serve with honey or maple syrup and fresh blueberries.
