Serves: 12-16 cookies
Preheat oven to 140°C
Sprinkle the sliced strawberries with icing sugar and lay on an ovenproof tray covered with a sheet of baking powder. Place in the oven for 120 minutes until dried, then remove and leave to cool.
Turn the oven up to 200°C
Beat the brown sugar and butter in a bowl until pale and fluffy. Add the beaten egg and vanilla seeds, then fold in the strawberries, baking powder and flour.
Place spoonfuls of the mixture onto ovenproof tray covered with a sheet of baking paper and bake for 12-15 minutes or until golden brown.
To serve, dust with icing sugar.
